Chocolate Amaretto Cheesecake

While a basic cheesecake, well-made, is a delight to the senses, when you add chocolate and amaretto it becomes every chocolate lover's dream. The almond liqueur enhances the chocolate flavor like no amount of pure vanilla extract. The texture is smooth and creamy like a souffle so you want to let it linger on your palate for a while and sip a fine cup of espresso in between bites.

Start the day before and make your own crème fraiche. To 2 cups of heavy cream add 3 Tbsp of buttermilk, cover lightly and let set for 24 hours at room temperature. You now have fabulous sour cream at half the cost of commercial brands and without preservatives. Refrigerate until needed. Use unsweetened crème fraiche on potatoes, omelets, and on everything else you'd normally use sour cream.

To make sweetened crème fraiche, start with a cold bowl and cold beaters or a whisk. Pour 1 cup of your homemade crème fraiche into the cold bowl, add 2 tsp of sugar, or to taste, and whip or whisk until soft peaks form. It's now ready to use on your favorite dessert. Try it on fruit clauflouti, puddings, crumbles, strawberry shortcake and this Chocolate Amaretto Cheesecake.

Ingredients for 9-inch Cake:

o 20-22 Oreo cookies, about 1 1/2 cups crushed
o 1/3 cup butter, melted
o 1 lb. cream cheese, (2 (8 oz.) pkg. Philadelphia Cream Cheese) softened
o 1 (14 oz.) can Borden's Sweetened Condensed Milk
o 3 whole eggs
o 3 oz. Amaretto liqueur
o 4 oz. chocolate chips, melted (use a brand with 70% cocoa)
o Whole strawberries for garnish
o 1 cup homemade sweetened crème fraiche
o 1 oz chocolate chips, melted

Method:

1. Preheat oven to 375° F. Butter the bottom of a 9-inch spring-form cake pan.

2. Combine Oreo cookie crumbs with melted butter. Press into the bottom of the prepared cake pan and up the sides 1/2-inch. Bake in preheated oven for 10 minutes. Cool. Reduce oven temperature to 325° F.

3. Combine cream cheese with condensed milk in a mixer until smooth.

4. At low speed, add eggs, one at a time, until incorporated. Add Amaretto and melted chocolate and mix just until uniformly distributed, scraping down sides of bowl occasionally. (Avoid beating air into the batter by using a low speed setting.)

5. Pour into prepared crust. Place pan on a baking sheet and bake for 45 minutes in center of oven. The top should look dry with the center slightly wet. Bake for an additional 5 minutes. Take care not to over bake or the cake will be dry and heavy. Remove from oven and cool completely. Chill in refrigerator until serving time.

6. Drizzled melted chocolate onto a piece of kitchen parchment paper in a tic-tac-toe design or a Spanish comb design, chill until serving time, then carefully remove each design from the parchment paper.

7. Remove spring-form from cake. Slice using a thin knife dipped in warm water. Top with strawberries, sweetened crème fraiche, and set the chocolate lattice upright in the crème fraiche.

SOUTHERN Sweet Chocolate Pie

1 package (4 ounces) sweet cooking chocolate
04:01 cup butter
1 2 / 3 cup evaporated milk
1 1 / 2 cups sugar
3 tablespoons cornstarch
1.8 teaspoon salt
2 eggs
1 teaspoon vanilla
1 uncooked pie shell 10 inch
1 1 / 3 cups flaked coconut
Cup chopped pecans 02:01

In a saucepan over low heat, stir chocolate and butter, stirringconstantly until blended. Take from heat and gradually stir the condensed milk. In a medium bowl mix together sugar, cornstarch and salt. Beat eggs and mix in the vanilla, then slowly the chocolate mass. Pour into uncooked pie shell. Combine coconut and pecans, sprinkle the chocolate mass pull. Bake at 375 degrees for 45-50 minutes or until puffed and golden. Cover loosely with aluminum foil to cook in the last 15 minutes when toppingappears to be getting too brown. Allow to cool for at least 4 hours before serving; this will allow the filling to set. Garnish with dollops of whipped cream to serve.

Chocolate Fudge Recipes - Old Fashioned Chocolate Fudge

Here's a timeless recipe for traditional chocolate fudge.

2 cups white sugar

1/2 cup cocoa

1 cup milk

4 tablespoons butter

1 teaspoon vanilla extract

Directions

Grease an 8x8-inch baking pan.

In a saucepan, combine the sugar, cocoa and milk, stir well. Bring to a boil, stirring constantly. Reduce heat and simmer at 238 degrees. Do not stir. Remove from heat.

Add in the butter and vanilla extract. Beat with a wooden spoon until the fudge loses its gloss. Pour into the prepared pan. Let cool. Cut into squares.

This heavenly fudge is made with milk chocolate, chocolate chips and marshmallow crème.

1 pound milk chocolate

1 pound semi-sweet chocolate chips

2 1/2 tablespoons butter

2 cups marshmallow crème

1 (12 oz.) can evaporated milk

4 cups white sugar

Directions

Lightly butter a 9x13-inch pan.

In a large bowl, combine the milk chocolate, chocolate chips, butter and marshmallow crème (and nuts if you're using them).

In a large saucepan, combine the evaporated milk and sugar. Cook over medium heat, stirring constantly. Bring to a boil for 4 minutes.

Pour hot sugar mixture over the chocolate mixture and stir with a large spoon until well blended. Pour into prepared baking pan. Let cool. Cut into squares.

1 1/2 cups confectioners' sugar

1/3 cup skim milk

6 tablespoons butter

1 cup semisweet chocolate chips

3/4 cup marshmallow crème

Directions

Grease an 8x8-inch pan.

In a heavy saucepan, combine the confectioners' sugar, milk and the butter. Cook over medium high heat, stirring constantly. Cook until fudge reaches 238 degrees on the candy thermometer. Remove from heat.

Add in the chocolate chips, marshmallow crème, vanilla and the cocoa. Stir well and pour into prepared pan. Let cool. Cut into squares.

This Aromatherapy Foods(TM) recipe made with pure essential oils makes very flat, crispy chocolate chip cookies. They will spread a great deal on the pan while baking. If you enjoy cookie pieces these cookies are ideal for cutting into bite sized bits before they have a chance to cool. Brown Sugar Chocolate Chip Cookie Recipe Ingredients

Half pound (2 sticks) unsalted butter, room temperature, plus some for baking sheet
2 cups packed brown sugar
1 cup granulated sugar
4 eggs
2 teaspoons pure vanilla extract
2 - 6 drops pure organic peppermint essential oil
3 cups all-purpose pastry flour
1 teaspoon salt
1 teaspoon baking soda
1 - 2 cups chocolate chips

Preparation and Baking Directions

Preheat oven to 375 degrees. Line two baking sheets with parchment; set aside.
Into small bowl cream butter until smooth, add sugars, and beat until smooth. Beat in eggs, vanilla and peppermint oil. Into a large bowl, sift together dry ingredients. Slowly stir dry ingredients into wet ingredients. Fold in chocolate chips.
Drop 2 tablespoons of dough per cookie onto baking sheet; space dough 2 inches apart to allow for spreading. Bake until golden, 8-10 minutes. Remove cookies immediately and allow to cool.
Makes sixty 3-inch cookies.

PLEASE NOTE: There are many cheap, synthetic copies of aromatic oils, but these are not recommended for cooking. For best flavors and results purchase the highest quality oils you can possibly find.
