Raw Food: the Next Best Alternative to Ice Cream? Easy to Make Homemade Sorbet. (fresh Fruits)

Probably one of the best desserts you can eat yet is tremendously good for you is Sorbet. It is a frozen dessert made from iced fruit puree and any other ingredient you would like to add for a light dessert.  It is sort of a gelato that has no milk in it so is very good for lactose free individuals or milk allergies.  Some sorbets contain alcohol that lowers the freezing temperature and makes it slightly softer.  It is very dense and flavorful, matching ice cream for quality and taste.  The Villa Dolce, makers of Italian gelato, are one of the best producers of sorbet on the web.
Sorbet has a history behind it that says the Roman Emperor, Nero, invented it during the first century AD.  The story said Nero had runners along the Appian way, passing buckets of snow to the mountains to his banquet hall, where it was mixed with honey and wine.  Other countries also laid claim to the original invention, but the mixture of snow, juice and fruit pulp is delicious.  The French served it traditionally between the starter course and the main course, and is served as a non-fat and vegan alternative to ice cream.
Sorbet is made from water, and fruit puree.  It is an excellent source of Calcium and Vitamin C, and is naturally fat free and low in calories.  They make excellent fruit smoothies and are good for you in health aspects. They would be similar to fruit whips where you put ice, fruit, and some light flavoring in a blender to whip a light and airy, non dairy drink.  Very tasty, natural, and healthy.

Ice Cream, Gelato, Sorbet - What Are the Different Types of Ice Cream?

Today you can enjoy a frozen dairy treat in just about every corner of the globe. However they are not all the same, ice cream in America is not the same as gelato in Italy and kulfi in India. So what are the most popular forms of these delicious desserts and what makes the different?

Ice cream - to be labeled as ice cream in the USA a product must contain 10% milk fat and more than 20% milk solids by weight. This is a relatively high level of fat and gives the American treat it's traditional smooth creamy texture. There are generally two types, "Philadelphia" style and "French" style, the latter is made with a custard base while the former has no eggs.

Gelato - traditionally made by hand in Italy it has only 7-8% fat which is less than what is required by law in the US. It usually has a much higher egg content of as well

Sorbets, sherberts and granitas- are almost identical products that don't contain any or only a small amount of milk; these are a often a fruit puree mixed with ice. The will be less smooth and often have very intense taste. These were the forerunners of ice cream and remain very popular.

Semifredo or frozen custard - a smooth, very creamy and richer alternative. It is generally not mass-produced and available only at the point of manufacture. It has a high egg content.

Frozen yoghurt-is a low or no fat alternative using milk and yoghurt in place of cream. It yields a sensation of tartness.

Kulfi is the Indian version, that is not whipped, has little air content and so is very dense. It is made by thickening sweetened milk so it has a very intense base. Combined with unusual flavors to a western palate, it makes a very unusual taste.

Summer Entertaining Idea - Acai Berry Sorbet

With summer in full swing, many people will be entertaining and feeding guests. After the delicious BBQ or other meal, many hosts will want to serve a dessert to end the meal on a sweet note. On these hot days and warm summer nights, many hosts will be thinking of cold desserts: ice-cream, sorbet, gelato, etc. These desserts are favorites of summer, and for good reason.

On the other hand, many guests are health conscious these days. People don't want empty, sugary or fat calories. Many hosts, in response to this are serving fruit based sorbets rather than more fattening ice cream. Sorbets are delicous, refreshing frozen fruit pulps. They are natural and nutritous. What could be better?

Well here is the tip. One of the latest heath trends it to increase the consumption of anti-oxidants. Anti-oxidants are compounds that occur naturally in many foods. Anti-oxidants have the capability to inhibit the damaging action of free radicals. Nutritionists tell us that a lot of cell damage is caused by the destructive action of free radicals, and they recommend eating 3000-5000 ORAC units per day (ORAC is Oxygen Radical Absorbance Capacity- a means of indexing the anti-oxidant capibility of foods).

One of the recent most popular high ORAC foods is the acai (pronounced "assa-hee") berry from Brazil. The acai berry has one of the highest ORAC scores of any fruit known to date, and beats pomegranate, blueberry, cranberry, etc. And acai has been popular in large Brazilian cities for almost 20 years, so the Brazilians know how to serve acai well. On of the most popular forms in Brazil is the acai bowl, which is basically frozen acai pulp mixed with guarana syrup (a common flavorant in Brazil made from the gurana fruit seed), and cane sugar. The resulting mixture is mainly acai pulp, and has a pleasant sorbet like texture and very nice berry flavor, similar, but distinct from blue-berry. Normally in Brazil , the acai bowl is served with sliced bananas and a sprinkle of granola.

Acai Roots, a company in San Diego run by Brazilians who were raised on acai bowls in Rio de Jainero, produces an excellent acai puree mixture [http://www.acai-berry.tv/acaipulp.html] in the style of the Brazilian acai bowl. As for cost, based on the 7.2 pound size (about 36 servings) priced in July 2008, the cost is 39.4 cents per ounce. One serving is considered 100 grams (about 3.4 ounces). I surveyed sorbets from netgrocers.com, and they ranged from 33.7 (Haagen Daaz raspberry) to 42.2 (Cia Bella Raspberry) cents per ounce. Frozen fruit purees of raspberry went from 43.1 cents per ounce to $1.42 per ounce on different websites!

Impress your health conscious guests by serving them acai bowls (acai sorbet). They will appreciate your thinking about their health, and for many, it will be their first chance to try acai.
