Top Tips For Cupcake Designs

Cupcakes have certainly progressed from the little tea treats that we used to bake and decorate with Mom. Today's cupcake designs are trendy and stylish, fun and humorous - just whatever takes your fancy. The secret here is to let your imagination run wild.

The following are some tips for:

Those occasions we find ourselves short of time.

o Buy ready made cupcakes from the bakery or supermarket and decorate them yourself.
o Use a ready mix packet to whip up your cupcakes.
o Use an edible writing pen for your designs instead of piping for a quick and easy solution.
o Petal paste (also known as sugar florist paste) is like ready to roll fondant and is a quick and convenient solution if time is an issue. This can be used to cut shapes.
o Pour a lot of sprinkles into a shallow dish and tip your cupcakes upside down into them.

Flavor and color for your cupcake designs.

o If you are making bright color designs and cakes make sure you always use natural food coloring as you will be using a lot of the color for brightness.
o Add a generous amount of Tia Maria or Kahlua to your frosting.
o Instant coffee or cocoa can be mixed with water to add to your icing.
o Lavender makes a pretty and unique addition to your cupcakes. The flowers can be used for decoration and are edible.
o Rose essence will add a taste of romance. Use pastel colors for the frosting.
o Use different bright colored cupcake cases in three differing sizes and place the completed cupcakes on top of each other to form a pyramid.

Barbados' Tapas Restaurant is Tops

If the Three Tenors had collaborated on a restaurant instead of "Nessun Dorma," they might have founded the popular new Tapas in Barbados.

Instead, three Italians well-known in the Barbados restaurant scene collaborated to make beautiful food together. Located on the new boardwalk on the south coast, Tapas occupies the two-level space Aqua once had. It's one of the most stunning sea-front locations on the island.

Tapas offers an elegant, quite posh space and, on this island known for its pricey meals, reasonable prices. Four of us will order every tapas plate that strikes our fancy (and then hoard our favorites when the waiter brings them) and still have spent less than $100US for the table. Paired with a good bottle of white wine, dinner is a true Barbados bargain. (And believe me, paradise doesn't come cheap.)

The trio of Italians behind Tapas is comprised of Alfredo Giovine, from the wonderful Mama Mia; Franco Parisi, formerly executive chef at Lone Star; and, from Dolce Gelato, Franco Diamanti, who makes the best gelato in the Caribbean - at least that's what my finely tuned sweet tooth tells me.

I caught up with Alfredo one night and asked why, without any advertising, Tapas has been doing so well since its mid-August opening. As Norah Jones music mixed with the soft music of the waves in the background, Alfredo told me he thinks that Barbadians and tourists alike were hungry for something new and affordable and that word of mouth keeps the place full 'most every night.

I'm pretty sure Franco and Franco and Alfredo were all born with the restaurant gene. The food is effortlessly good, rare for a restaurant that just opened. The place also feels good; if you're a local it's a place "where everyone knows your name" and if you're a guest to our island, you're quickly made to feel at home.

In his heavy Italian accent, Alfredo told me, "The restaurant is my home. I feel like people come to my home. At 17, I work receiving tourists at the port (in his home town in southern Italy). I end up taking everyone home for a meal with my mother and father."

The Food at Tapas

If you're at Tapas for tapas, you will start your evening eating tapas and finish eating tapas, not stopping until you're full.

But you can also order off the full dinner menu for a more traditional dining experience. Starters run from a light and satisfying Beef Carpaccio on rocket salad ($11.50US) to the adventuresome Pan-Fried Goat Cheese in a Panko Crust (with pumpkin, delish!) ($11US) to a hearty Parmigiana (layers of baked eggplant, tomato, and Parmesan cheese) ($9.50US).

I've not had the New Zealand Rack of Lamp (with warm pepper and olive salad and spicy potato wedges) but friends who have rave about it ($28US). I have had the Fish of the Day - local fish such as king fish, flying fish, snapper, mahi mahi (which we call dolphin here) - pulled out of the sea just a couple of hours before being blackened or grilled, as you wish, and paired with mango salsa. Now is that a tropical-paradise meal to remember?

I don't know about you, but it's enough to make me break out in song.

Christmas Cake Recipes - Raspberry Cream Cake

This is a beautiful looking cake that is perfect for the holidays.

1 pkg. yellow cake mix

Raspberry Filling

Chocolate Glaze

Directions

Prepare packaged cake mix according to directions for two 9-inch cake rounds. Cool cake for 10 minutes, then remove from pans and put on wire racks or plates; cool completely.

Raspberry Filling

2 tablespoons all purpose flour

2/3 cup milk

6 tablespoons butter, softened

1/3 cup shortening

2/3 cup sugar

3/4 teaspoon vanilla extract

2 cups fresh raspberries, divided

Directions

In a small saucepan, combine the flour and milk; mix until smooth. Bring to a boil, stirring constantly for 1 to 2 minutes or until thickened. Let cool to room temperature.

In a small bowl, cream together the butter, shortening, sugar and vanilla. Beat in the milk mixture until sugar is dissolved (about 5 minutes).

Place bottom cake layer on serving plate. Spread cake with 1 cup of filling. Place the remaining filling in a pastry bag with a star tip (or use a resealable plastic bag and cut a hole in the corner). Pipe filling around the outside edges of the cake.

Sprinkle 1-3/4 cups of fresh raspberries over filling. Put the remaining layer on top. Chill cake in refrigerator. Top with Chocolate Glaze.

Chocolate Glaze

1 cup semisweet chocolate chips

3 tablespoons half and half cream

2 tablespoons butter

2 tablespoons light corn syrup

White chocolate garnish and pearl dragees (optional)

Directions

In a saucepan, combine the chocolate chips, cream, butter and corn syrup. Cook over low heat until the chocolate is melted; stirring occasionally. Remove pan from heat; stir until smooth.

Spread enough of the glaze on top of cake to completely cover. Put cake back in the refrigerator and let chill for 10 minutes. Take cake out of refrigerator and pour on remaining glaze; letting glaze drip over the sides. Chill cake for 1 hour. Decorate the top of cake with fresh raspberries, white chocolate garnish and pearl dragees.

Makes 10 to 12 servings.

Christmas Cake Recipes: Gingerbread Torte Cake

A delicious gingerbread cake with cream cheese frosting.

3/4 cup butter, softened

3/4 cup sugar

2 eggs

1 cup molasses

3 cups all purpose flour

3 teaspoons ground ginger

2 teaspoons baking soda

1-1/2 teaspoons ground cinnamon

3/4 teaspoon salt

1 cup milk

Cream Cheese Frosting

Directions

Preheat oven to 350 degrees.

Line three 9-inch cake pans with waxed paper. Spray paper with nonstick cooking spray and sprinkle with flour. In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs, one at a time, beating well after each one. Beat in the molasses.

In another bowl, combine the flour, ginger, baking soda, cinnamon and salt; add to creamed mixture, alternating with the milk. Spoon batter into prepared pans. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Let cake cool for 10 minutes then remove to wire racks; let cool completely.

Cream Cheese Frosting

1 (8 oz.) pkg. cream cheese, softened

1/4 cup butter, softened

2 teaspoons grated lemon peel

3-3/4 cups confectioners sugar

Directions

In a small bowl, beat together the cream cheese and the butter. Add in the lemon peel. Gradually beat in the confectioners' sugar; blend well.

Place bottom cake layer on a serving plate. Spread with a layer of frosting (about 2/3 cup). Put the second layer on top and spread same amount of frosting on top. Repeat with top layer. Refrigerate cake until ready to serve.

Makes 10 to 12 servings.

Making Your Own Cake Topper

If you have a thing about decorating cakes, whether you are experienced or novice, then you've got what it takes to design your own unique cake topper. If you love the design aspect of cake decorating more than the niceties and details of sugar craft and baking, then you will be passionate about putting together fruits or flowers or figurines and other pieces into stunning cake toppers.

The cake toppers embellish cakes that grace special occasions like birthdays, weddings, graduations, and anniversaries.

In creating cake toppers, it is important to cling to quality, exceptionality, and imaginative designs. The perfect cake topper mirrors the persona and style of the celebrator, and signifies the theme of the occasion.

You can begin your cake decorating venture with adornment background you bought from a novelty shop. For weddings, items like chapel windows can be added with groom and bride figurines, flowers plus other ornaments. To add charm, you can then put in little lights placed at the back of the stained glass window to reflect and highlight onto the statuette.

Gum paste and polymers are nice materials for figurine making of all sorts-grooms and brides, doves, hearts, etc. Figurines and decorations made of polymer clay will endure for so many decades.

For occasions where babies and young kids are the celebrator such as showers, christenings, and birthdays, you can stack petit fours. Bedeck petit fours to appear like cute building blocks. Beautiful and various bouquets and flowers like tulips and lilies can also be created with gum paste molds. These molds are available in several sizes, patterns, and shapes.

Always exercise creativity. Say, a heaped, fanciful wedding cake can carry each layer, but for the top, frozen to look a lot like the palace's walls. Flowers and stairways can be toted up. And for the topper, employ royal icing as paste and place the towers you created on the top tier. Put in a pair of birds or hearts or other romantic emblem to the cake topper, and you'll have a cake topper signifying the groom and bride's bright future together.

In placing your cake topper, always remember to put bigger decorations on wide stands so they don't drop. Smaller ornaments can either be clutched in place using flower thorns or attached using royal icing. When stacking multi-layered cakes, it is best to set the topper at the venue already to prevent it from falling off in transit.

Prepare first the tier that will carry the cake topper. Use rods or dowels if the topper is quite heavy. If it is light, a decoration stand or plate will do.

Great Desserts For Any Table

Despite all the options out there, many of us find that we fall back on the same old desserts week after week. While they taste great at first, you can quickly get sick of pies, ice cream, or cake. If you are looking for the next great dessert, but find yourself intimidated by some of the recipes out there, you are not alone. Sometimes it seems like food journals and magazines fall on either side of two extremes - difficult and time consuming or the same things we always make.

The good news is that there are a lot of interesting and tasty desserts out there, and they do not need to be hard to make. Some may require a few unusual ingredients or techniques, but once you make them once or twice; you will get the hang of it. Here are a few ideas for great desserts to mix things up a little at your house.

Dessert Pizza

We see them at restaurants, but it rarely occurs to us to make these pizza-shaped desserts at home. However, they can be quick, easy, and relatively inexpensive. Try making sugar cookie dough or brownie batter from scratch, or buy prepackaged versions for a quicker crust. Top sugar cookie crusts with fresh fruit in season (apples and brown sugar are a real winner), chocolate, nuts, and lots of other tasty choices. Just remember to cook crusts entirely or partially before topping to avoid sogginess.

Ethnic Desserts

American cuisine has gone on to include a lot more dishes from other cultures in recent years. Many households regularly include Italian, Mexican, Chinese, and even Indian, Thai, and Japanese food for dinner. If you serve a meal based in another culture, never forget to include the desserts. Cultures throughout Asia have variations on Sweet Mango Sticky rice, for instance. Indian fruit lassis are a delight, and gelato makes a nice change from ordinary ice cream. 

If you or your family is a little concerned about strange foods, start by including some exotic ingredients in more ordinary dessert dishes. Lychee fruits, while strange looking, are a pleasant addition to the standard fruit salad, as are pineapple, mango, kiwi, and passionfruit.

Forgotten Favorites

Of course, you do not have to search far for new desserts. Some of them are old favorites that we just have not made in a while. Check out your older cookbooks for easy desserts your mother or grandmother used to make, and remember not to be afraid to experiment a little. Just be sure to do it when you have plenty of time - a deadline is never a good match for creativity in the kitchen. However, even desserts as humble as Jello, bread pudding, and cobbler can be a real treat without being difficult.

Creative Cookie Ideas

Tired of the same old chocolate chip or oatmeal raisin cookies? Are you looking for something more creative? I'll admit, a typical batch of fresh chocolate chip cookies wins me over every time. At the same time, I'm always open to trying new foods and like to sample different things whenever I can. I'm going to share a few really creative cookie ideas with you, as some of these may appeal to you.

One thing you can do is to try making cookies with cake mix. You'll find that the cookies actually crack as they flatten. These are delicious, and you can choose your cake mix flavor.

Another idea is to make or buy some peanut butter cookie dough. From there, prepare the dough and place them in the oven. Once the cookies come out, make a small hole inside the cookies and place a reese's peanut butter cup inside each one. I think you'll get the idea from there.

Like white chocolate? Then you'll probably like the idea of some nice, fresh oatmeal white chocolate cranberry cookies. These are delicious, and I always have friends asking me to make these again.

The last one I'll suggest is adding cherry and butter toffee to your cookie mix. Throw in some chocolate chips, and you'll have a sweet recipe with a lot of flavor.

Who Invented Ice Cream? And Ice Cream Cone History

Want to know who invented ice cream? Do know the history of the cone? Do you think you have an idea? Debates have swirled over these topics for centuries. Here, we'll present the facts on this frozen treat and on ice cream cone history and you can decide who you think invented one of the world's most popular treats.

There are many myths and legends and other documented stories concerning who invented ice cream. Some are true; others are just plain myth. Ready for some entertaining reading?

The following blurbs are fun and would be a great conversation piece as you serve up your next bowl of homemade frozen goodness. So, can you decide what is true or not? Picture these fascinating scenes...and you decide! Just who invented ice cream?

History Myth, Folklore...and Truth?!

* During the 400s B.C., people were already eating frozen treats! Royalty from Persia enjoyed ice mixed with various flavors and fruit.

* Alexander the Great (356-323 B.C.) is well known for his love of eating snow that was flavored with honey and nectar.

* Nero, a powerful Roman emperor (54-68 A.D.), had snow and ice brought to him from the hills by slaves. Nero was so intent on getting his beloved treat, that if it melted before it got back to him, he would execute the slaves! Nero also had rooms built beneath his palace in order to store what the slaves brought back. He would top his frozen treat with some juicy fruit!

* During the 1500s, Mughal emperors had horsemen bring them ice so that they could make fruit sorbets.

* In 1533, the French King Henry II married the Italian Catherine de' Medici. Her Italian chefs that she brought with her to France were able to make sorbets through their special ability to flavor ice. So, the idea was in France and it spread to Italy. But how did it get to France?

* There was another famous king who loved to eat flavored snow: Charles I of England. Since this treat was so precious to King Charles, he sought to keep it a royal treat. He bribed the chef with money in order to keep the recipe a royal secret. What happened when King Charles died? You guessed it! The chef spread it like wild fire!

What about the History of the Cone?

The cone. Who invented it? Just like with who invented ice cream, cone history is disputed. Again, I'll present what is reported and you decide!

Italo Marchiony is credited with inventing a dish you can eat that was made for holding this frozen favorite in 1896. This may not have been a cone, though.

David Avayou insists that he was the one to whom credit should go for making the cone popular in St. Louis in 1904 at the World Fair. He saw how the frozen desserts were served in paper cups in France, and sought to improve upon the idea. After experimenting, he made the cone.

Charles Menches also wants some recognition...but why? His claim may seem to be plausible, but what is it?

The same is with Ernest Hamwi. Many historians credit him with the invention.

The Fun Formula For Homemade Ice Cream

Traditional homemade ice cream was a custard-like mixture made with eggs, vanilla, milk and sugar. Original recipes were much like making homemade pudding before the instant brands came along, and might involve cranking an ice cream maker full of ice and rock salt until the mixture was frozen.

Now, there are variations on homemade ice cream that can involve an ice cream machine that makes it in quickly, or even just a plastic bowl in the freezer. Many creative frozen dessert lovers enjoy experimenting with a variety of flavors as well as low calorie, healthier options.

It's easy to make a dreamsicle treat using sugar free instant pudding mix in French vanilla flavor and substituting orange juice for half of the milk. Of course, you can use any flavor of pudding or juice for that matter. What about banana pudding with pineapple juice or tapioca with cranberry? There are several ways you can freeze and serve this frozen treat. Kids love it in Popsicle trays or you can make it in a bowl and stir every hour or so until it freezes.

Another great frozen treat can be made by using yogurt and a variety of flavors to make a creamy frozen dessert. You can use instant Jell-O in different flavors and add fruit like berries, banana slices, cherries, or peaches and make a creamy, low calorie and healthy treat.

Some people choose to indulge their frozen yogurt with chocolate pudding mix, peanut butter, and marshmallows. When it comes to homemade ice cream, you are only limited by your imagination and you don't need a special machine to make it. Simply freeze it in a plastic bowl with a lid until it gets to the desired consistency. Some parents will make smoothies in a blender and stick it in the freezer before dinner and then dessert is quick and easy.

Many of the new appliances make it pretty easy to make frozen treats at home, whether you are looking for healthy treats or rich and luxurious specialties that you and your family will love. Most people enjoy a little comfort food now and then and it seems to be more rewarding when you have made it yourself.

A great idea for adults is a chocolate dark forest cheesecake desert. It is very easy to make by mixing yogurt and cream cheese in the blender, add some chocolate pudding mix, a little bit of cream and turn out into a bowl. You can add whole frozen raspberries and white chocolate chips and freeze, while stirring occasionally to keep it smooth and creamy. Add a little chocolate or raspberry drizzle and some whipped cream to serve, and you have a homemade ice cream dessert you can't buy.

As you can see, you are only limited by your imagination when it comes to today's homemade ice cream. Of course, if you miss that homemade ice cream flavor of yesterday there are many ways to get it, but you can replicate it quite easily with some French vanilla pudding mix and milk in a plastic bowl, or better yet, one of the great ice cream machines that can make it quickly.

Two Candy Recipes Suitable For Diabetics

Are you diabetic but crave candy? One the the biggest adjustments for me when I was diagnosed as a type 2 diabetic was, in a word--Candy! As all those who are familiar with my website and writings know, sweets are my weakness. I could skip the meal just to get to the dessert table and it would not bother me one bit. I soon found that "sugar-free" candy cost quite a bit more than regular candy and sometimes it wasn't very good. That's not to say all "sugar-free" candy isn't good, some of it is downright delicious--and expensive. So I started working with some of my favorite candy recipes and have come up with some good alternatives. Below are a couple of my favorites to share with you.

STRAWBERRY FUDGE BALLS

1 pkg (8 oz) light cream cheese, softened

6 oz sugar-free chocolate pieces, melted

3/4 cup sugar-free cookies ie vanilla wafers or shortbread, crushed into crumbs

1/4 cup sugar-free strawberry preserves, seedless or strained

finely chopped plain almonds and/or cocoa powder for rolling

Combine the melted chocolate with the softened cream cheese and mix until blended. Stir in cookie crumbs and preserves. Chill overnight. Remove from refrigerator and shape into 1-inch sized balls. Roll balls in the crushed almonds and/or cocoa.

TEXAS COW PATTY CANDY

1 stick butter

2 cups Equal Sugar-Lite

1/4 cup cocoa

1/2 cup low-fat milk

1/3 cup creamy peanut butter

3 cups quick-cooking oats

1 tsp vanilla extract

In a 2-qt saucepan, combine butter, Equal, cocoa and milk. Cook over medium heat, stirring often, until mixture begins to boil. Boil for a full two minutes, stirring often. Remove mixture from the heat and add vanilla and peanut butter. Stir until peanut butter is melting. Add the oats and stir until all the oats are covered. Drop by a teaspoon onto waxed paper or lightly buttered cookie sheets. Allow to cool fully so candy will set.

Some Tips For Rolling Out Fondant

When you start decorating cakes you will find rolling out fondant is a trick. Before you can work with the fondant you want to get it soft enough to allow it to spread.

Rolling out fondant is easiest when you knead it just like if it was bread. You want to get it to a soft smooth state. From there you will use a nice heavy rolling pin. A marble pin will work fine.

If this is new to you don't start large. Have a smaller cake to cover. If you have worked with pie crust this is similar to pie dough. If you are coloring your fondant a different color you will add the coloring once you have a nice soft ball. just keep working in the color until it is where you want it. This can wear you out. But once you practice it gets easier.

Rolling out fondant can get easier with practice. If you are rolling it and don't like the color yet just put it back to the ball stage and work the color in. Roll from the center out to keep a level layer.

Once you have got a piece large enough to cover your cake, stop. Put the piece over your cake and trim it. Smooth it over the cake with you hands. You might want to wet your hands a little bit to smooth your fondant easier.

You will be amazed at how much fun you can have as you practice cake decorating. Rolling out fondant correctly can be fun. There are lots of great ideas you can learn if you are really interested in cake decorating.

SERVIZI SCADENTI, GIAPPONESI DISERTANO L'ITALIA TOKYO - Furti, tassisti abusivi, truffe, menù poco chiari, scarsa qualità al ristorante, servizi scadenti e strade sporche. Per un turista giapponese la Dolce Vita della Capitale è sempre più salata. E a confermare il quadro è anche l'Asahi Shimbun, il secondo quotidiano del Sol Levante, che in una corrispondenza da Roma ha tracciato un quadro poco rassicurante sul Belpaese, sempre meno frequentato dai vacanzieri giapponesi. Fin da quando atterra all'aeroporto di Fiumicino, Hiroshi, comune visitatore nipponico, incappa già nella prima truffa. Abbordato da un tassista abusivo con l'auto bianca per adescare i turisti più ingenui, paga oltre cento euro per essere portato fino al centro di Roma mentre con un regolare taxi ne pagherebbe 40. Ma in alcuni casi - come segnalato dai turisti ad un'agenzia che si occupa di giapponesi - "le ricevute sono confuse e con una calligrafia incomprensibile". Arrivato al Colosseo, una delle mete preferite da giapponesi, Hiroshi subisce l'assedio dei centurioni, che chiedono insistentemente un'offerta per una foto da scattare davanti al monumento. Stessa cosa succede alla Fontana di Trevi per gli ambulanti di souvenir, i cosiddetti madonnari, che cercano di vendere oggetti-ricordo il cui prezzo è sempre un tabù per chi, come i viaggiatori nipponici, non ha molta dimestichezza con l'euro. Per Hiroshi è meglio comprare un souvenir in un negozio o prendere un caffé, un gelato o l'acqua in un bar ...

White House Pecan Pie

Over the James river and through the woods of Dinwiddie County to grandmother's house we went for the holidays. The pecan pie alone was well worth the trip!

My grandmother, "Meme", found her pecan pie recipe printed in The Progress-Index on Wednesday February 26, 1964 and was said to be "Mrs. Landon B. Johnson's Favorite Pie" (typo and all). The recipe is actually the masterpiece of Zephyr Wright, the Johnson family's White House cook.

White House Pecan Pie

1/2 cup (1 stick) butter
1 cup sugar
1 cup dark corn syrup
1/2 teaspoon salt
1 1/2 teaspoons vanilla
3 eggs
2 cups coarsely chopped pecans
Fluted unbaked pastry shell in a 9-inch pie pan or plate

Allow the butter to stand in a covered medium mixing bowl at room temperature until it is extremely soft. Add sugar, corn syrup, salt and vanilla; with a sturdy hand rotary beater or mixing spoon, beat until thoroughly blended. Add eggs and beat gently just until blended. Fold in the pecans. Pour into pastry shell. Bake in a moderate (375 degrees) oven on the rack directly below the center rack until top is toasted brown and filling is set in center when pie is gently shaken - about 40 to 50 minutes.

Pastry edge should be browned and the bottom pastry a pale gold. If top of pie gets very dark toward end of baking time, place a tent of foil over it. Cool on wire rack. If desired, serve with unsweetened whipped cream.

I make this pie every Thanksgiving and Christmas because it's absolutely delicious and brings back memories of holidays spent at Meme's Farm in Ford, VA.

Gum Paste Cake Decorating Tips For Beginners

Making gum paste decorations is an art in itself.  The results are durable and can be saved as souvenirs long after the cake has been eaten.  Following are some cake decorating tips to help you along the way as you explore experiment with gum paste:

Purchase gum paste at a local arts and craft or cake decorating supply store - some enthusiasts make their own, but you may want to skip this step at first.
Familiarize yourself with the many colors available.  You can add color yourself with a gel or paste - or purchase colored gum paste.
When coloring be very careful to not use too much color gel or paste.  Knead in tiny amounts at a time.  Application with a toothpick helps you to control the amount you use.
Start with simple projects first and then progress to more complicated ones.  A lily is one of the simpler flowers.  Also try creating your own fantasy figures, such as a teddy bear or gnome.
You don't even have to make your own flowers - you can purchase them at a bakery or cake decorating supply center. Ready-made flowers are also useful as templates you can copy.
Give yourself lots of time if you are planning to make your own decorations - especially if you are inexperienced.  You can achieve wonderful, colorful results, but the work is very detailed and time consuming - involving cutting, molding, shaping, detailing, and assembling each creation.
Keep the gum paste covered at all times and wrap it tightly when you put it away - just like other malleable substances, it is not workable when it dries out.

What Tools Do You Need?

You can purchase a tool kit or only tools that will suit your current project. Some of the tools that are handy for working with gum paste are:

Dog bone shaping tool - helps to shape flower petals
Shell tool for making lines on flower petals
Umbrella, Ball, and Veining tools are other shaping tools specifically designed for flower making
Cutters
Foam surface to cut on
Heavy gauge wire for spearing a piece while you work on it
Small brushes.

Finding More Cake Decorating Tips

Unless you are a very artistic person or have experience making decorations with fondant, the most efficient route for acquiring skills will be from an experienced instructor or even an instructional video.  This is probably the most practical gum paste cake decorating tip, that is:  Attend a class or workshop to gain a solid foundation in the skills you need to work with gum paste.  This foundation will be the springboard for your own personal style and creativity.

Two Delicious Lemon Cake Desserts

Sunday dinners and holidays were always a special treat at my mother-in-law's house. She was famous throughout the county for her wonderful desserts. Here are two lemon cake recipes she enjoyed making. Sadly, we lost her in April 2008, but these and other recipes bring us sweet memories of her joy in serving her family nutritious meals and delicious desserts. Happy mealtimes bring a family together through memories shared. Build some memories for your family and try these wonderful lemony desserts today.

Lemon Meringue Cake
(makes 12-16 servings)

1 pkg. Duncan Hines Lemon Supreme Deluxe Cake Mix
1 regular-size package lemon pudding and pie filling
2 egg whites
1/4 cup sugar

Using 8 inch round cake pans, make and cool cake as directed on the label. Cook lemon pudding and pie filling as directed for pie filling. Cool 30 minutes according to the box instructions; stir several times. Beat egg whites until frothy; gradually add sugar; beat until stiff but not dry. Split each cake layer into 2 thin layers. Stack on cookie sheet or oven-proof plate, spread lemon pudding between layers and on top of cake. Spread meringue around sides of cake. Bake at 450 degrees F for about 5 minutes, until light brown. Cool to room temperature before serving. Store cake in the refrigerator.

Lemon Pound Cake

1 package Duncan Hines Lemon Supreme Deluxe Cake Mix
1 Package lemon instant pudding mix (4 serving)
1 tbsp. lemon juice
1/2 cup Crisco oil
1 cup water
4 eggs
10 lemon drop candies

Blend all ingredients in large bowl, then beat at medium speed for 2 minutes. Bake in a greased and floured 10-inch tube pan at 350 degrees F for about 45-55 minutes, until center springs back when touched lightly. Cool right side up for about 25 minutes, then remove from pan.

Glaze: Blend 1 cup confectioner's sugar with either 2 tbsp. lemon juice. Drizzle over cake. Press lemon drops into the glaze at equal distances.
